fresh from the market: apricots

Don’t they look like egg yolks? They’re actually apricots in syrup! I saw a recipe for apricot puffs last week in the newest issue of Sunset Magazine and had to make it. It was super easy and delicious! Basically, you halve some apricots, put them in a cast iron pan with some sugar and let it cook until the sugar bubbles. Then make some small popovers in muffin pan and spoon the apricots with syrup on top. YUM!
